I saw a recipe for a chicken and sweet potato casserole type dish which looked delicious so I decided to try it out myself. However, on opening my fridge I found I didn't have all the right ingredients to decided to improvise a little!!
1/2 onion
1 clove garlic
1/2 red pepper
1 tbsp curry paste (add/decrease depending on fond-ness of spice!)
1 chicken breast
1 sweet potato (chopped and cooked in boiling water until tender)
1/2 tin sweetcorn
Fry the onion and garlic in a hot pan of oil.
Add curry paste.
Chop the red pepper and add to pan.
Cut chicken breast into chunks and add.
Once you have cooked the sweet potato, drain and add it to pan.
Add sweetcorn.
Season with salt and pepper and just fry everything together for about 10-15 minutes.
Simple and yummy - I served mine with plain white basmati rice.
