chicken stir fry

I've never really been a fan of chicken stir fry, I tend to find them quite bland. However my friend says she always makes it and so I thought I'd give this Chinese classic a chance to redeem itself.
I bought some authentic Chinese egg noodles and soy sauce from a Chinese food shop in Leeds indoor market and I think the soy sauce transformed the dish! It was SO tasty!
This recipe made just enough for 2 people.

1/2 onion

1 clove garlic
1 chicken breast - chopped
1/2 green pepper
Handful of frozen peas
As much packet stir fry veg as you want
Egg noodles
A large splash of soy sauce (I used light soy sauce but I have no idea of the difference between light and dark)

Fry the onion and garlic in a large saucepan (alternatively use a wok but I don't have one with me at uni)

Add chopped chicken breast.
Once chicken has cooked, add chopped pepper and frozen peas (no need to cook first)
Fry for about 2 minutes then add the stir fry veg.
Fry for about 5 minutes.
Meanwhile cook the noodles - add to a pan of boiling water, wait to soften, separate with a fork then drain.
Add noodles to the larger pan.
Drizzle with as much soy sauce as you prefer.

Wa-La! Delicious and so simple!
