Two of my all time favourite foods are tuna and sweet potato, so when I stumbled across the idea of mixing the two together in the form of a fish cake I just had to try it!
Simple ingredients, simple method, simply delicious!
1 sweet potato
1 can tuna
2 eggs
25g breadcrumbs (I don't have any measuring scales at uni so I just guessed and used 2 slices of bread)
Boil a large pan of water and once boiling, add chopped sweet potato and cook for 8-9 minutes until soft and tender enough to mash.
Drain, rinse under cold water, transfer to a large bowl and- mash with potato masher or fork.
Add the tuna, egg and breadcrumbs and mix.
Heat about 2 tbsps of olive oil in a large frying pan.
Using your hands, grab a small handful of the mixture, roll into a rough ball in your hands, place in pan and squash down with fingers to make a burger shape.
Repeat this until you have used up all the mixture.
Fry the patties until firm and each side is a nice, golden brown.
Serve immediately and with whatever you like! I went for some chopped up green pepper - another favourite ingredient!
