'Whatever you got' vegetable chilli

I am a lover of all things easy and healthy and this recipe ticks both of these boxes! As a student I often find myself looking through my fridge wondering what I can make with what I've already got. This vegetable chilli is not only delicious, but insanely easy and you can literally add whatever you like! This is what I used when making mine:

1 clove garlic

1 onion
1 red pepper
1 teaspoon chilli powder
1 tin chopped tomatoes
Half tin sweetcorn
1 tin kidney beans
Sprinkling of basil & dried herbs (just what I found in my cupboard!)

Heat oil in a large saucepan over a medium heat.
Chop onion and garlic & add to pan - fry until soft.
Add chopped red pepper.
Chuck rest of ingredients in, season with salt & pepper and leave to simmer for about 25-30 mins!

And that's it! So simple and so scrumptious! I served mine with plain white basmati rice.
